3 Mushroom Soup


1/2 lb crimini mushrooms - sliced
1/2 lb baby bella mushrooms - sliced
1 lb white button mushrooms - sliced
1/2 large sweet onion
1 cup butter
1/2 cup olive oil
4 cups chicken stock
1 cup heavy cream
2 Tbsp parseley
1 cup water


-Sautee the mushrooms in the butter and and olive oil.
-Bring chicken broth to a boil then add sauteed mushrooms, water and cream
-Bring to boil, then reduce heat and simmer

Salt and pepper to taste
Server with parsley.

Goes great w/ crusty bread.
