I have also frozen this. Just defrost & it should be fine. I have made a most delicious dip out of it. Just layer it into the bottom of a pan & add salsa, lettuce, tomatoes, olives, corn, onions,sour cream, black beans, guacamole or anything else you have on hand. And, then serve this with tortilla chips or corn chips. Dig in. This can even be a meal. It is a good alternative on a really hot day!

Definately FREEZE those leftovers! They should be fine so long as you do not have any lettuce or fresh tomatoes in the mix (green bell peppers and onions will freeze well).  As the previous responder mentioned, the leftovers are perfect for burrito filling.  They can also be used to top Huevos Rancheros - - top tortilla chips with bean and meat mixture, add two fried eggs and some enchilada sauce or salsa and you have a whole new meal.  You could also make tamale pie by adding diced tomatoes (canned or fresh), corn kernels and diced red onion to the bean and cheese mixture, spread in a casserole and top with corn bread mix and bake at 350 until corn bread is cooked through (if you don't have a homemade bread recipe you like, Jiffy boxed mixes will work in a pinch).  If the mixture is really dry, you can break it into chunks and use it in a frittata topped with fresh salsa.  Good Luck!!

I have frozen this mixture with no problems. We use this mixture for burrito filling. Just warm flour tortillas and add the hot mixture with shredded cheese and any other toppings you like (salsa, sour cream, guacamole, etc.), roll up burrito style. We have also used it for tostadas, fry corn tortillas until crisp and spread filling on top adding whatever toppings you like. I hope this helps.

Hi. I'm new to this site. I was curious if anyone has any ideas on how to save and reuse taco salad dip. I have beans and taco meat combined. Can that be frozen? What would you reuse it for? Thanks, Jennifer
