Meatballs!

Wesley Underhill:
This is a wonderful recipe for meatballs handed from my grandmother:

For every two pounds of ground beef use:

one egg
4 tablespoons of ketchup
1-2 tablespoons of mustard
1/2 medium onion very finely chopped
2-3 tablespoons of worcester sauce
2 teaspoons oregano
1 teaspoon salt
1 teaspoon pepper
2 teaspoons of your favorite steak seasoning
approximately 1 cup oatmeal

Mix everything except the oatmeal, with your hands. When mixed, add oatmeal in small handfulls, kneading until fully mixed. The oatmeal acts to keep the shape of the meatball as well as absorb extra moisture from the ingredients, making very flavourful meatballs. Cook about 16 meatballs for 40-45 minutes at 400 degrees. Drain fat and place on paper towel on a cooling rack.
This recipe makes excellent hamburgers as well as meatloaf. Play with the seasonings for different tastes. For added nutrition, try adding flax and/or chopped spinach.

Hope you like it.

June:
Got to have fresh bay leaves. I love my bay leaf tree. I keep it more like a bush. You can use them in soups rice. All sorts of things. Not unusual, but I love it.

CSinbad:
Anyone else do things special to their meatballs or sauce?  I add fresh Basil and Garlic to my sauce as well as lots of onions.

CSinbad:
I make a spaghetti sauce rather than meatballs. ŬI cook the meat drain the fat than pat even more fat out with paper towels. ŬI add the sauce and cook it for several hours. I cook onions with the meat then add more when I cook the sauce down (love onions). ŬI do this because I Ŭdon't like bread in my spaghetti. Ŭ Ŭ

Bups:
My meatball recipe -

Lean ground beef
finely diced onions
1-2 eggs
bread - or cracker crumbs
bbq sauce
seasoning salt
garlic - finely chopped or powder
whatever other spices you like

use enough eggs & bbq saue so that they stick together.

I cook them in the oven on a broiler pan - then I freeze them 12 to a bag.

I use them for spaghetti - simply heat in sauce.
OR I make a kind of bbq sauce with brown sugar etc.. and serve over rice.

I usually buy the beef in bulk and do up several dozen ata time.
