Split pea soup is the easiest thing in a crockpot.  Rinse a bag of dried split green peas in a colander, throw them in the crockpot and fill it 3/4 full of water, then cook on low all day.  If you want to jazz it up, throw in a bay leaf or some sage with the peas at the beginning, or dice up an onion and/or carrot and turn up the temperature to high for about an hour.  You can also add some onion salt, bacon bits and/or a dash of liquid smoke but only towards the end of cooking–if you add early on, salt toughens the peas and the long cooking time boils out any flavor that was added.
