    Definately FREEZE those leftovers! They should be fine so long as you do not have any lettuce or fresh tomatoes in the mix (green bell peppers and onions will freeze well).  As the previous responder mentioned, the leftovers are perfect for burrito filling.  They can also be used to top Huevos Rancheros – – top tortilla chips with bean and meat mixture, add two fried eggs and some enchilada sauce or salsa and you have a whole new meal.  You could also make tamale pie by adding diced tomatoes (canned or fresh), corn kernels and diced red onion to the bean and cheese mixture, spread in a casserole and top with corn bread mix and bake at 350 until corn bread is cooked through (if you don’t have a homemade bread recipe you like, Jiffy boxed mixes will work in a pinch).  If the mixture is really dry, you can break it into chunks and use it in a frittata topped with fresh salsa.  Good Luck!!
